  • On gas grills (like Delta Heat or Broilmaster), turn on only the outer burners.
  • On ceramic cookers (like the Big Green Egg), use a convEGGtor or heat-deflector for a stable roasting environment.
    This prevents the outside from burning while the inside cooks through.

2. Brine or Dry-Brine for Deep Moisture

A turkey that’s been brined—especially dry-brined for 24–48 hours—retains more moisture and seasons itself from the inside out.

  • Dry brine: Salt + herbs directly on the turkey, uncovered in the fridge.
  • Wet brine: Submerge in seasoned saltwater overnight.
    Both methods help ensure tender meat and crispy skin once it hits the grill.

3. Temperature, Not Time (Don’t Overcook!)

The secret to juicy turkey is stopping the cook before it dries out.

  • Grill until the breast hits 160°F and the thigh reaches 170°F.
  • Let it rest 20–30 minutes; it will rise another 5°F.
