The Best Pizza Ovens for Florida Living & Your Backyard

The Best Pizza Ovens for Florida Living & Your Backyard

One of the joys of having your own
personal backyard pizza oven is the ease of making meals authentic and fast. At
Bay Breeze Patio, we carry HPC Fire Inspired as well as Alpha Ovens. These
ovens cook fast at high temperatures, and produce one-of-kind results.

Here’s a look at the benefits and offerings of HPC Fire Inspired pizza ovens and Alfa Pizza Ovens.

HPC Fire Inspired

One of the joys of HPC Fire Inspired pizza oven is that it reaches 950˚F in just 15 minutes for genuine Neapolitan style pizza cooked in 90 seconds. A trusted fire provider since 1975, HPC Fire Inspired has been at the forefront of fire feature products for decades and features several different series. The Forno Series Pizza Oven is a dual fuel oven that can be wheeled around easily. Forno de Pizza’s classic design complements its black cart and intricate handcrafted glass mosaic oven. Every oven is uniquely handcrafted and is powered by HPC’s electronic ignition system. The gas valve system is the safest and most reliable on the market. With a choice of six glass mosaic colors, its elegant finish is as personal as your backyard. The Villa Series is the hearth and oven built-in. Available in LP as well as natural gas, The Villa oven is the lightest authentic brick-dual-fuel oven on the market. Created to be built-in to a 35” deep counter or more, The Villa is coined the safest operable wood and gas fueled oven and is ideal for outdoor kitchens.

We teamed with John at Dude. Food. Fire. and put the HPC Fire Inspired Oven to the test at a charity wine festival. See the delicious results here. Stop by our showroom to test HPC Fire, a trusted brand that lights every time.

ALFA Wood Fire Grills

One of the most popular backyard pizza ovens on the market today is Alfa Ovens due to their heat genius innovative technology that allows you to cook the pizza base and condiments at different temperatures. Three technologies make this possible:

HeatKeeper™ Refractory Brick – The Heat Keeper™ brick, produced at the Alfa plant in Italy, absorbs and stores heat. The Heat Keeper™ refractory brick is crucial for quickly cooking a pizza, making it soft and crispy at the right point without burning it.

DoubleDown Ceramic Superwool® Insulation – The space between the stainless steel walls of an Alfa home oven is filled with DoubleDown Ceramic Superwool® insulation. This European ceramic fibre offers twice the heat resistance of rock wool used by other pizza oven manufacturers. It also retains heat better and allows pizzas to cook to perfection.

Patented Full Effect Full Circulation Flue System® This particular system optimizes the circulation of hot air inside Alfa ovens. Rather than being evacuated quickly through the flue, as takes place in other pizza ovens, the hot air circulates in the cooking chamber and is pushed down to further heat the refractory brick and pizza.  In Alfa ovens, the heat is pushed in an “around and down” and then conveyed by a special deflector to the flue to be expelled. In doing so, the oven always maintains the right temperature so as to optimally cook both the base and the condiments of your pizza.

Alfa has introduced its most portable and most affordable oven yet—the new gas-fired Moderno Portable. With its Italian design and innovative temperature technology, Portable is Alfa’s most compact pizza oven and is perfect for cooking one pizza at a time. Available in portable, compact, medium or large, Alfa Pizza Ovens can cook up to 5 pizzas at one time.

We are the official local retailer for HPC Fire Inspired and Alfa Ovens, and we invite you stop by our showroom at 32 Forest Shore Drive (one mile west of Silver Sands) and test for yourself the joys of a backyard, personal pizza oven.  Online purchases coming soon. For more information or discuss the joys grilling, call Wayne Paul at 850-269-4666.

Alfa Pizza Ovens Available at Bay Breeze Patio in Destin, Florida

Looking for the perfect addition to your outdoor kitchen? Consider an authentic Italian pizza oven.

Italy-based pizza oven innovator,  Alfa Ovens, has introduced a line of eight outdoor, at-home pizza ovens – all manufactured in Italy and each offering Alfa’s Heat Genius™ Technology. The exclusive technology allows homeowners to cook crust and toppings at different temperatures (just like in a professional wood-fired oven at a pizzeria) in an
at-home pizza oven.

“Not only do authentically Italian-manufactured Alfa Pizza Ovens make better pizza, but because of these technologies, the ovens get up to baking temperature more quickly and bake your
pizza faster,” says Alfa pizza chef Giuseppe Pinto. “This makes these Alfa ovens perfect for anyone who wants to entertain at home, gathering friends and family outside for an at-home pizza experience that you couldn’t duplicate without traveling to a pizzeria in Rome!”

The Alfa ovens sell for suggested retail prices starting at $1,499 for the single-pizza capacity Alfa Nano, one of two models designed specifically for outdoor kitchens.

Alfa’s outdoor pizza ovens are either wood-fired or gas-fired or, in some cases, both (with available hybrid kit). Alpha Ovens are offered exclusively
through Bay Breeze Patio in the Destin, Florida area. In addition to the Heat Genius™ Technology, here are some of the reasons Alpha Ovens are different:

  1. Authentic HeatKeeper™ Firebrick (vs ordinary lava stone or ceramic) – Alfa uses an authentic fire brick in every pizza oven they make. This HeatKeeper™ fire brick, which Alfa manufactures in their factory in Rome, absorbs and stores heat far better than the lava stone or ceramic used in other pizza ovens. This is crucial to baking a crispy, moist crust at precisely the right temperature, quickly and without burning.
  2. DoubleDown Ceramic Superwool® Insulation (vs ordinary rock wool insulation) – The space between the two stainless steel walls on an Alfa Pizza Oven is filled with DoubleDown Superwool® insulation. This European ceramic fiber offers twice the heat resistance of the rock wool insulation used in other at-home pizza ovens, which maintains the heat and allows you to consistently bake perfect pizzas. Comparatively, other entry-level ovens on the market actually have no insulation at all.
  3. Patented Full Effect Full Circulation Flue System™ (vs ordinary “up and out” chimney systems) – Other pizza ovens exhaust precious heat out the chimney at the top of their oven. Not Alfa. The chimney may be at the top, but, thanks to the patented Full Effect Full Circulation Flue System, hot air circulates full around the chamber and is driven back down to where it can heat the firebrick and pizza. This ensures the proper temperatures required to bake both crust and toppings.

TEC Grills Added to Offering of Best High Performance Grills in Destin

It is summer grilling season and families are heading outdoors. Whether you’re grilling around the pool or on the patio, grill masters are putting their skills to the test. For those looking for a premium grill in and around Destin, Fla., we’re proud to carry the best selection of high performance grills in Northwest Florida.

This summer, we’ve added TEC infrared grills to our collection of premium grill brands. From Broilmaster gas grills to Big Green Egg smoker/grill, our collection of premium grills are among the leading American-made grills on the market.

If you’ve settled on an infrared grill, TEC offers some of the best infrared grills available on the market today. They are the only 100% infrared grills made in America. TEC uses the highest quality stainless steel and are made to last. The best value for the dollar, TEC grills are affordable yet durable.

TEC developed and introduced the world’s first infrared gas grill in 1980. More than 30 years later, TEC’s first customers are still cooking on their very first grills because they are built to last a lifetime. Therefore, they still make replacement parts for every grill ever made. Made in America and built using the finest grade of materials, including 304 stainless steel. TEC grills are built to last.

What makes TEC grills the best—THE ADVANCED TECHNOLOGY. With its patented 100% infrared grilled system, this grill can smoke, sear, barbecue slow and low and heat up fast. In fact, TEC can heat from 0-850° F in 10 minutes! With this grill there are no flair ups, no charring, no hot or cold spots. It heats quickly, and cleans easily.

What is different about TEC grills?

  1. TEC grills are manufactured in the US with 304 stainless
  2. TEC grills use one of four different 100% infrared burners. One and two are resident and commercial. The third, the Cherokee burner, is an enhanced version of the residential burner.
  3. TEC grills have a wide temperature range from 200oto 900o For example, the G-sport grill average temperatures range from  250o to 850oF  while 500o to 850o F on average for the Cherokee model.
  4. TEC manufactures the only grill line that is totally infrared
  5. TEC features flare-up resistant burners

THE RESULT: Tender, Juicier Food. The more hot air a grill uses to cook food, the drier it will be, and traditional gas grills cook with 100% hot air. Even other infrared grills use about 65% hot air (and 35% infrared). But TEC’s patented, 100% infrared grilling system eliminates the hot air, so food retains up to 35% more of its own natural juices.

In addition, foods achieve a charbroiled flavor. Radiant glass panels below the cooking grates incinerate food drippings, creating a rich, smoky vapor that flavors the food. Now you can have it all – the convenience of gas and the charbroiled flavor of charcoal or wood, but without the ashy residue.

Whether you select TEC, Big Green Egg or other high performance grill, when you’re ready to upgrade your grill, we’re ready to help you uncover your grilling preference and select a brand that is best suited to deliver the most flavorful and delicious meal

Learn more about our collection of premium grills online or visit our showroom in at 32 Forest Shore Drive, Miramar Beach (just one mile west of Silver Sands Premium Outlets) or call us at 850-269-4666.

Happy Grilling!

How to cook your Thanksgiving Turkey on the Big Green Egg

It’s our favorite time of year! Fall grilling season, Thanksgiving feasts and holiday parties are just a few of the fun moments that make us love this time of year. How will you prepare your Thanksgiving turkey? There are three options—brined, injected or roasted. Each of these methods can be accomplished indoors in the oven or outdoors on the smoker or the Big Green Egg. Here’s a look at each so you can determine your turkey preference.

Roasted
Roasted turkeys may be cooked in oven  but we prefer them cooked on a smoker or Big Green Egg. Roasting a turkey is best done in a two-step process. Set the EGG up for indirect cooking with the temp at 325°F/163°C. Use a handful of pecan chips for a light, smoky flavor and to provide a deep brown color to the turkey. Spread the seasoning generously over the outside of the bird. Load the bird onto a Vertical Poultry Roaster or Rib and Roasting Rack, then place into a drip pan. Add the onion and celery to the drip pan. Fill the pan with chicken broth, wine, or water. Cook for 12 minutes per pound until the turkey has reached a safe minimum internal temperature of 165°F/74°C throughout the bird. Reserve the drippings from the drip pan to make gravy. For complete roasting recipe for turkey on the Big Green Egg, click here.

Brined
Soaking a turkey overnight in a solution of salt and water ensures moist results. When you add aromatics to the brine, the resulting roast is also infused with a subtle character all its own. You can brine a turkey for the oven or smoker.

Smoked Brined Turkey
Once you try brined turkey, you’ll soon want to try a “smoked” brined turkey. The turkey gains a subtle smoky flavor and is moist and succulent, and if you prefer a bolder smoky flavor, add more hickory or pecan smoking wood chips in increments during cooking. This turkey is great for holiday meals, and you can use the leftovers to make wonderful sandwiches.

This turkey has a subtle smoky flavor and is moist, juicy and delicious. To cook a smoked brined turkey on your Big Green Egg, click here for  Chef Kevin Rathbun’s delicious recipe. Or try Steven Raichlen’s Maple-Brined Smoke-Roasted Turkey recipe and prepared to be “wowed!’

Injected

Injected turkeys tend to have bold flavor. Click here to view two video recipes from Dr. BBQ, demonstrating how to prepare two holiday turkey flavors– an Injected Cajun Creole Butter Turkey and a Lemon, Pepper and Herb Turkey. If you are preparing a whole turkey, just double the injection recipe and inject into the thighs as well as the breasts. These are great recipes for Thanksgiving, Christmas or a delicious meal throughout the year.

How to prepare for a BBQ competition

For those considering entering a team in Eggs on the Beach, Sept. 26th at Seascape Resort, we’ve gathered some tips for preparing for a BBQ Competition. Once you register a team for Eggs on the Beach, you’ll want to use the weeks ahead planning out your menu, creating a budget, and of course, perfecting your recipes.

Here are tips for preparing for your first EggFest or any BBQ competition:

How Many Team Members Do I Need?

For the Eggs on the Beach competition, teams may have up to four team members. However, you can recruit friends and family behind the scenes. Consider inviting friends, family or neighbors over on Friday for a prep-party. Many hands make light work when prepping sauces, meats and items to grill/smoke the next day.

What to cook?

Your foodie heart already has an idea of what to make for the competition, so start selecting meat, sauces, and spices and begin practicing your award-winning recipes. Start talking to the local butcher now to ensure he/she will have what you need in time for the competition. There is no limit to the number of items you can cook so consider changing dishes throughout the competition. While the event begins at 10 a.m., the bulk of tasters will attend between 11:30 – 1:30 p.m. so prepare to serve your best recipes during those hours.

Choosing a Team Name

You’ll need a team name, so get together with your teammates and brainstorm.

Be creative and have fun in picking your team name. Consider a team name that provides a theme for décor. What themes will make your booth eye catching and lure tasters over to try your signature recipes? There are many team names already in use, so check on the internet at www.bbqteamnames.com to get ideas.

 What to budget?

There is a $50 entry fee to participate in Eggs on the Beach, which includes welcome bag for each team member as well as lump charcoal, fire starter, plate setter, 2 tables, a tent, paper plates, plastic utensils, napkins and toothpicks. A large or extra-large demo Big Green Egg will be supplied for each cook team. (These Eggs are available for purchase at a 20% discount if you’ve ever thought of owning your own.) Ingredients including meat prices vary greatly. Some teams spend more as they pursue special meats, spices and other specialty tools. You’re only serving tastings (not a full meal) so consider how many samples one dish may actually create.

What to bring?

Next, you’ll need to think of all the utensils and equipment you use while cooking. Below is a list of some basics that every team should consider:

  • Tongs
  • Thermometer
  • Knives
  • Cutting boards
  • Spray bottle
  • Spatula
  • Pot holders
  • Measuring Bay Breeze Patio Anniversary 2014 043 (2)cups/spoons
  • Lighter/Fire starters
  • Paper towels
  • Trash bags
  • Wet wipes
  • Dishrags
  • Hand soap/Hand sanitizer
  • Water container
  • Coolers
  • Gloves
  • Aluminum pans/foil
  • Coolers/Ice
  • Ponchos
  • Chairs
  • Beverages/bottled water
How to keep food safe?
Visit the FDA website to review food safety and handling. Start by bringing everything perishable in cooler with plenty of ice. Clean all prep surfaces with heavy duty cleaner. Don’t leave uncooked food out on tables.
Wear disposable gloves with handling food. Watch for possible cross containerization between different Bay Breeze Patio Anniversary 2014 043 (2)types of food. Have different cutting boards/plates for raw food and finished food. Bring and use Handi Wipes often.

Remember to invite your friends to share the experience and to vote for your dish.  More friends, means more votes.  Most competitions, including Eggs on the Beach, offer a tickets in advance for a discounted price. We recommend purchasing Eggs on the Beach taster tickets in advance to save $10. The best part is  you’ll have fun and support a great cause. Wayne’s Smokin’ Pork Ribs

To me the ideal way to do ribs is on a smoker.  This is a tradition all across the South and leads to smoky and tender ribs. You can use any type of ribs: baby back, St. Louis or full ribs. Because the wife rules in our house, we only cook baby backs.

The classic way down south for smoking ribs is using a dry rub. We handle many different brands, but our favorite happens to be any of Wayne’s Get Grillin’ Rubs.

The rest is easy.

In just seven simple steps, you will have smokin’ pork ribs that are “fall off the bone” good.

1. After purchasing your ribs, remove the silver skin on the back side of the ribs.

2. Take yellow mustard and spread liberally over the front and back side. Then apply your favorite rub.

Ideally you do this the day before to let the rub penetrate the meat. This is not absolutley necessary, but helps develop the flavor.

3. Light your smoker and set to 225-250 degrees. Add wood chips if desired for an additional smoky flavor.

4. Place ribs on smoker and smoke for 3 to 4 hours, depending on your temperature.

5. For the “fall off the bone” experience, try wrapping your ribs in foil after the 3rd hour and cook for one more hour in a little apple juice. If you like BBQ sauce, start saucing around the four hour mark.  Be careful with sauces that have a lot of sugar, it will burn.

6. The ribs are done when the meat has pulled back from the top of the bone and you can easily pull the remaining meat away from the bone. I like to wrap and put into a cooler for an hour. This seems to redistribute the juices.

7. Get plenty of napkins and dig in!!!!
