You’ll be surprised how many friends and family members will happily join you by the grill when it’s time to check the temp.

The type of grill you own makes a difference in the techniques you use. In addition, depending on your desired outcome, there are variety of methods, ranging from brining to smoking, for cooking the turkey on the grill. We’ve compiled the best tips from some of the leading premium grill brands. Big Green Egg

There are many benefits to smoking your turkey on the Big Green Egg and the company offers plenty of options and tips. For the perfect roasted turkey, BGE recommends cooking with indirect heat with the convEggtor at 325 degrees. By using pecan chips, your turkey will have a light, smoky flavor and deep brown color. Cook Team Registration Now Open for the Sixth Annual “Eggs On the Beach” Cooking Competition , Sept. 28

We are excited to announce that cook team registration is now open for the Sixth Annual “Eggs on the Beach” EggFest Cooking Competition, which will be held on Saturday, Sept.28, from 10 a.m. to 1:30 p.m. at Seascape Resort in Miramar Beach.

As one of the official Big Green Egg Festivals held around the country, Eggs on the Beach cooking competition features many opportunities for cook teams to compete and win in a variety of categories, including “People’s Choice Awards”, “Judges Awards”, Non-profit cash awards, best booth décor award and more.

To participate, cook teams create bite size portions of their favorite recipes to be judged by the public as well as celebrity judges. Each team of up to six is given a large or extra-large Big Green Egg to use during the competition. Bay Breeze Patio provides the lump charcoal, fire starter, table, tent, paper plates, plastic utensils, napkins and toothpicks. Tasters vote for their favorites, as teams vie for bragging rights and prizes, including the grand prize, a brand new large Big Green Egg.

For the 2019 event, teams have the opportunity to win in a variety of categories. Cook teams may now enter in one of three divisions—corporate cook teams, backyard cook teams and non-profit cook teams. We’re also working on a great new group of celebrity judges, which will be announced this summer.

The Backyard Cook Team with the most taster votes will win the grand prize—a large Big Green Egg (valued at $1,110).  Second place will receive a medium Big Green Egg and third place will win a Mini-Max portable Big Green Egg. The top three Corporate Cook Teams with the most votes will earn trophies, and grilling accessories.

Non-profit Cook Teams have a chance to win cash prizes toward their cause. The team with the most taster votes will earn a $3,000 cash donation toward their cause. Second place will earn $2,000 and $1,000 will go to the third-place winner. All teams are eligible for the Judges’ Awards and the top three winning teams will be presented a trophy by a celebrity judge. Prizes will also be given for “best booth décor” and “best bite cooked with Knob Creek Bourbon”.

Proceeds from Eggs on the Beach benefit two local charities—The Fisher House of the Emerald Coast and Food for Thought. Located on Eglin Air Force Base, the Fisher House provides a “home away from home” for military families ensuring family members can be together during treatment for serious illness or physical/occupational therapy. Food For Thought aims to end food insecurity by serving students in Okaloosa and Walton County with backpacks filled with healthy meals and snacks for nights and weekends. In addition, tickets may be purchased for a chance to win a Big Green Egg and other items donated by area businesses with these proceeds also benefiting the charity partners.  In the past five years, Eggs on the Beach has raised nearly $136,000 for local charities.

For those who are interested in owning a Big Green Egg, the Demo Eggs that are used during the event will be pre-sold with nest (metal stand) and plate setter for a discounted price. Both Large and XL Eggs will be sold and all come with a limited lifetime warranty. Demo Eggs can be picked up after the event, between 4 – 5 p.m. on September 28.

Cook team registration is $50 for a team of six and each team member will receive a welcome bag, including a commemorative t-shirt and Wayne’s Get Grillin’ Rubs. If so, the Steak Cook Off Association is calling for you! Anyone who loves meat is invited to become a certified judge in the fastest growing cooking organization in the U.S. When you become a member of the Steak Cook Off Association (SCA), you are invited to judge SCA events. With more than 300 events planned for 2019, SCA is one of the fast-growing cooking organizations in the world. From competitions throughout the U.S. to locations all around Australia, the Steak Cook Off Association hosts hundreds of competitions each year.

How to prepare for a BBQ competition

For those considering entering a team in Eggs on the Beach, Sept. 26th at Seascape Resort, we’ve gathered some tips for preparing for a BBQ Competition. Once you register a team for Eggs on the Beach, you’ll want to use the weeks ahead planning out your menu, creating a budget, and of course, perfecting your recipes.

Here are tips for preparing for your first EggFest or any BBQ competition:

How Many Team Members Do I Need?

For the Eggs on the Beach competition, teams may have up to four team members. However, you can recruit friends and family behind the scenes. Consider inviting friends, family or neighbors over on Friday for a prep-party. Many hands make light work when prepping sauces, meats and items to grill/smoke the next day.

What to cook?

Your foodie heart already has an idea of what to make for the competition, so start selecting meat, sauces, and spices and begin practicing your award-winning recipes. Start talking to the local butcher now to ensure he/she will have what you need in time for the competition. There is no limit to the number of items you can cook so consider changing dishes throughout the competition. While the event begins at 10 a.m., the bulk of tasters will attend between 11:30 – 1:30 p.m. so prepare to serve your best recipes during those hours.

Choosing a Team Name

You’ll need a team name, so get together with your teammates and brainstorm.

Be creative and have fun in picking your team name. Consider a team name that provides a theme for décor. What themes will make your booth eye catching and lure tasters over to try your signature recipes? There are many team names already in use, so check on the internet at www.bbqteamnames.com to get ideas.

 What to budget?

There is a $50 entry fee to participate in Eggs on the Beach, which includes welcome bag for each team member as well as lump charcoal, fire starter, plate setter, 2 tables, a tent, paper plates, plastic utensils, napkins and toothpicks. A large or extra-large demo Big Green Egg will be supplied for each cook team. (These Eggs are available for purchase at a 20% discount if you’ve ever thought of owning your own.) Ingredients including meat prices vary greatly. Some teams spend more as they pursue special meats, spices and other specialty tools. You’re only serving tastings (not a full meal) so consider how many samples one dish may actually create.

How to keep food safe?
Visit the FDA website to review food safety and handling. Start by bringing everything perishable in cooler with plenty of ice. Clean all prep surfaces with heavy duty cleaner. Don’t leave uncooked food out on tables.
Wear disposable gloves with handling food. Watch for possible cross containerization between different Bay Breeze Patio Anniversary 2014 043 (2)types of food. Have different cutting boards/plates for raw food and finished food. Bring and use Handi Wipes often.

Remember to invite your friends to share the experience and to vote for your dish.  More friends, means more votes.  Most competitions, including Eggs on the Beach, offer a tickets in advance for a discounted price. We recommend purchasing Eggs on the Beach taster tickets in advance to save $10. The best part is  you’ll have fun and support a great cause. Wayne’s Smokin’ Pork Ribs

To me the ideal way to do ribs is on a smoker.  This is a tradition all across the South and leads to smoky and tender ribs. You can use any type of ribs: baby back, St. Louis or full ribs. Because the wife rules in our house, we only cook baby backs.

The classic way down south for smoking ribs is using a dry rub. We handle many different brands, but our favorite happens to be any of Wayne’s Get Grillin’ Rubs.

The rest is easy.

In just seven simple steps, you will have smokin’ pork ribs that are “fall off the bone” good.

1. After purchasing your ribs, remove the silver skin on the back side of the ribs.

2. Take yellow mustard and spread liberally over the front and back side. Then apply your favorite rub.

Ideally you do this the day before to let the rub penetrate the meat. This is not absolutley necessary, but helps develop the flavor.

3. Light your smoker and set to 225-250 degrees. Add wood chips if desired for an additional smoky flavor.

4. Place ribs on smoker and smoke for 3 to 4 hours, depending on your temperature.

5. For the “fall off the bone” experience, try wrapping your ribs in foil after the 3rd hour and cook for one more hour in a little apple juice. If you like BBQ sauce, start saucing around the four hour mark.  Be careful with sauces that have a lot of sugar, it will burn.

6. The ribs are done when the meat has pulled back from the top of the bone and you can easily pull the remaining meat away from the bone. I like to wrap and put into a cooler for an hour. This seems to redistribute the juices.

7. Get plenty of napkins and dig in!!!!
