Holiday Meals on the Big Green Egg – Prime Rib, Leg of Lamb, Rotisserie Chicken

As Destin’s source for outdoor kitchens, premium grills and the Big Green Egg, Bay Breeze Patio’s Grill Master Wayne is an expert at cooking outdoors. From grilling to smoked meats to baked dishes, there is nothing you can cook inside that you can’t cook on the grill. Here are three recipes for the most delicious, flavorful holiday meals prepared on the Big Green Egg.

Herbed Butter Prime Rib

Prime Rib is a great option for a holiday feast. This easy-to-follow recipe by Ray Lampe (aka Dr. BBQ) is a crowd pleaser and pairs just as well with a beer as it does with red wine.

“You can cook any size roast to fit the size of your crowd as long as you use an instant read thermometer and you take it out when it reaches an internal temp of 125°. Only the time will vary and don’t forget to rest it for 15 minutes no matter the size. As for the herbs, use what you like or have around. These are just my favorites. Add some extra garlic if you wish and a little cayenne to the mix if you like it spicy,” Ray Lampe, Dr. BBQ. View full recipe here: https://biggreenegg.com/blogs/recipes/herbed-butter-prime-rib

Smoked Leg of Lamb

A leg of lamb is one of the most gorgeous centerpieces for any holiday dinner or special occasion. This elegant meal is also one of the most flavorful cuts of meat you can celebrate with and this show stopper by Mary, founder of Vindulge and author of Fire + Wine cookbook, is quite easy to make.

Mary shares that “The secret to an amazing lamb is to start by sourcing it from a trusted lamb rancher or butcher. Next, just don’t overcook it. Instead slowly smoke the lamb to medium rare for a tender and rich flavor.”

If you are looking for a tender and rich Smoked Leg of Lamb recipe, this one is incredible. A Bone-in leg of lamb, rubbed with dried herbs, smoked low, and topped with a flavorful garlic, wine, and butter sauce over the top. Butter Basted Rotisserie Chicken

Experience smoked indulgence with this rotisserie-grilled chicken recipe.  Coated in a sweet blend of BBQ seasoning along with sprigs of rosemary and thyme and cloves of garlic, the chicken is roasted to perfection on the Big Green Egg using the rotisserie attachment. View full recipe here: https://biggreenegg.com/blogs/recipes/butter-basted-rotisserie-chicken

EGGCESSORY ALERT: The new rotisserie attachment is available for both the large and extra-large size Big Green Egg and in stock at Bay Breeze Patio. This popular EGGcessory is the perfect Christmas gift for any Big Green Egg enthusiast. View rotisserie attachment here: https://biggreenegg.com/collections/rotisserie

Test Your Temp

Most importantly, any meats you cook for the holidays should reach the recommended temperature. Be sure to test any meat before serving with a meat thermometer. Big Green Egg offers many styles, ranging from meat probes to digital thermometers to the ULTIMATE 4 Probe Meat Thermometer (a sophisticated radio frequency system designed for precision outdoor cooking, allowing you to monitor up to four dishes simultaneously while tracking your egg’s internal temperature, all from the comfort of your couch). 3 Tips & Recipes for Cooking a Juicy, Flavorful Thanksgiving Turkey on the Grill

As we prepare for the Thanksgiving Holiday, the number one question we’re asked this time of year is, “how are you preparing your turkey?” and “how long do you cook it to ensure it isn’t dry?”

Grilled turkeys deliver the most delicious, juicy flavorful meat. In order to achieve the best grilled Thanksgiving turkey, our Grill Master, Wayne Paul, recommends these 3 tips to consistently achieve juicy, flavorful, and crowd-pleasing results.

.

Top 3 Tips for Turkey on the Grill

1. Use Indirect Heat & Keep the Grill Steady

Turkey needs even, gentle cooking to stay juicy.

  • Set up your grill for indirect heat at 325°F–350°F.
  • On gas grills (like Delta Heat or Broilmaster), turn on only the outer burners.
  • On ceramic cookers (like the Big Green Egg), use a convEGGtor or heat-deflector for a stable roasting environment.
This prevents the outside from burning while the inside cooks through.

2. Brine or Dry-Brine for Deep Moisture

A turkey that’s been brined—especially dry-brined for 24–48 hours—retains more moisture and seasons itself from the inside out.

  • Dry brine: Salt + herbs directly on the turkey, uncovered in the fridge.
  • Wet brine: Submerge in seasoned saltwater overnight.
Both methods help ensure tender meat and crispy skin once it hits the grill.

3. Temperature, Not Time (Don’t Overcook!)

The secret to juicy turkey is stopping the cook before it dries out.

  • Grill until the breast hits 160°F and the thigh reaches 170°F.
  • Let it rest 20–30 minutes; it will rise another 5°F.
Use a reliable thermometer—especially helpful on high-performance grills like Fire Magic, which maintain steady heat.

Bonus Tip: Add wood chunks for a subtle smoke layer.
Apple, cherry, or pecan wood adds classic holiday flavor without overpowering the turkey.

The Best Pizza Ovens for Florida Living & Your Backyard

One of the joys of having your own
personal backyard pizza oven is the ease of making meals authentic and fast. At
Bay Breeze Patio, we carry HPC Fire Inspired as well as Alpha Ovens. These
ovens cook fast at high temperatures, and produce one-of-kind results.

Here’s a look at the benefits and offerings of HPC Fire Inspired pizza ovens and Alfa Pizza Ovens.

HPC Fire Inspired

One of the joys of HPC Fire Inspired pizza oven is that it reaches 950˚F in just 15 minutes for genuine Neapolitan style pizza cooked in 90 seconds. A trusted fire provider since 1975, HPC Fire Inspired has been at the forefront of fire feature products for decades and features several different series. The Forno Series Pizza Oven is a dual fuel oven that can be wheeled around easily. Forno de Pizza’s classic design complements its black cart and intricate handcrafted glass mosaic oven. Every oven is uniquely handcrafted and is powered by HPC’s electronic ignition system. The gas valve system is the safest and most reliable on the market. With a choice of six glass mosaic colors, its elegant finish is as personal as your backyard. The Villa Series is the hearth and oven built-in. Available in LP as well as natural gas, The Villa oven is the lightest authentic brick-dual-fuel oven on the market. Created to be built-in to a 35” deep counter or more, The Villa is coined the safest operable wood and gas fueled oven and is ideal for outdoor kitchens.

ALFA Wood Fire Grills

One of the most popular backyard pizza ovens on the market today is Alfa Ovens due to their heat genius innovative technology that allows you to cook the pizza base and condiments at different temperatures. Three technologies make this possible:

HeatKeeper™ Refractory Brick – The Heat Keeper™ brick, produced at the Alfa plant in Italy, absorbs and stores heat. The Heat Keeper™ refractory brick is crucial for quickly cooking a pizza, making it soft and crispy at the right point without burning it.

DoubleDown Ceramic Superwool® Insulation – The space between the stainless steel walls of an Alfa home oven is filled with DoubleDown Ceramic Superwool® insulation. This European ceramic fibre offers twice the heat resistance of rock wool used by other pizza oven manufacturers. It also retains heat better and allows pizzas to cook to perfection.

Patented Full Effect Full Circulation Flue System® This particular system optimizes the circulation of hot air inside Alfa ovens. Rather than being evacuated quickly through the flue, as takes place in other pizza ovens, the hot air circulates in the cooking chamber and is pushed down to further heat the refractory brick and pizza.  In Alfa ovens, the heat is pushed in an “around and down” and then conveyed by a special deflector to the flue to be expelled. In doing so, the oven always maintains the right temperature so as to optimally cook both the base and the condiments of your pizza.

Alfa has introduced its most portable and most affordable oven yet—the new gas-fired Moderno Portable. With its Italian design and innovative temperature technology, Portable is Alfa’s most compact pizza oven and is perfect for cooking one pizza at a time. Available in portable, compact, medium or large, Alfa Pizza Ovens can cook up to 5 pizzas at one time.

We are the official local retailer for HPC Fire Inspired and Alfa Ovens, and we invite you stop by our showroom at 32 Forest Shore Drive (one mile west of Silver Sands) and test for yourself the joys of a backyard, personal pizza oven.  Online purchases coming soon. For more information or discuss the joys grilling, call Wayne Paul at 850-269-4666.

3 Sizzling Summer Recipes for the Grill

We’re always in search of our next favorite recipe and dish on the grill. Darren at BBQHost.com recently shared his top 3 sizzling recipes for summer grilling and backyard barbecues.

“These  fresh set of recipes are a great way to kick off the grilling season.  With this menu, you can use the grill of your choice to prepare every aspect of the meal, from the mouthwatering main course to the sweet treat you’ll indulge in afterward. We’re starting with the unexpected–turkey burgers “tartare”.

#1 Turkey Burgers “Tartare”

No, we’re not suggesting that you eat raw ground turkey—in fact, that poses a serious health risk. Instead, we’ve jazzed up the poultry by adding steak tartare-inspired ingredients. These burgers are best served on toasted English muffins with a smear of extra Dijon mustard.

Yield: 4 servings

Ingredients:

  • 1 pound lean ground turkey
  • 1 large egg, beaten
  • 1 medium shallot, minced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons capers, drained and finely chopped
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon Tabasco sauce
  • 4 English muffins, split and toasted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Neutral oil for the cooking grates (canola works well)

Directions:

  1. In a large bowl, combine the ground turkey, beaten egg, shallot, mustard, Worcestershire, capers, Tabasco, salt, and pepper.
  2. Form the meat into patties. Take care, as the mixture will be sticky and wet.
  3. Prepare a medium charcoal fire, or set a gas grill to medium (about 350 degrees). Lightly oil the grilling grates. Because this mixture forms a looser burger than you might be used to with ground chuck, you might want to add interlocking panels or a similar attachment to the grates, to prevent the burgers from breaking apart and slipping through the grid.
  4. Grill the burgers, undisturbed, for about 8 minutes. Adjust the heat to medium-low and flip the burgers to the other side. Continue to cook until the meat is cooked through and the internal temperature registers at 160 degrees Fahrenheit, about 8 minutes longer.
  5. Serve with toasted English muffins and additional Dijon mustard, if desired.

We recommend pairing the turkey burgers will grilled zucchini.

#2 Grilled Herb Zucchini

Zucchini is a wonderful companion for the grill. Not only is it a snap to prepare, it can be ready within minutes. For a spicier kick, try substituting a lemon-pepper rub for the salt and pepper.

Yield: 4 servings

Ingredients:

  • 2 medium zucchini
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh herbs, minced (a mixture of parsley, basil, and rosemary works well)
  • 1 teaspoon lemon zest

Directions:

  1. Trim the ends off the zucchini and cut lengthwise into planks about 1/2-inch thick.
  2. Prepare a medium-hot grill.
  3. In a small bowl, combine the herbs and lemon zest (or simply use Wayne’s Get Grillin’ Lick the Plate Garlic Butter seasoning)
  4. Brush the zucchini planks with olive oil and sprinkle with salt and pepper.
  5. Grill the planks, flipping once, until grill-marked and tender, about 3-4 minutes per side.
  6. Remove from the heat and sprinkle with the lemon-herb mixture and additional salt and pepper to taste, if desired. Serve immediately.

Finish the meal off with grill fruit and caramel!

#3 Grilled Pineapple with Toasted Coconut and Caramel

This unusual and delightful dessert can be made with simple supermarket ingredients. For a special treat, make your own caramel sauce in advance. Most versions will keep in the fridge for about a week.

Yield: 4 servings

Ingredients:

  • 12 slices canned pineapple rings, drained
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 1/4 cup sweetened coconut flakes
  • Vanilla ice cream, for serving
  • Caramel sauce, for serving

Directions:

  1. In a small saucepan, melt the butter over medium-low heat. Add the brown sugar and stir until sugar is dissolved, about 3 minutes. Remove from heat and set aside.
  2. In another, dry saucepan, toast the coconut flakes over medium heat until lightly browned. Set aside.
  3. Set your grill to medium, about 350 degrees.
  4. Brush both sides of the pineapple rings with the brown sugar mixture. There may be some of the mixture left over, and that’s okay–you don’t want to add too much to the pineapple, or it may burn.
  5. Carefully grill the pineapple rings, turning once, until grill marks appear and the sugars are caramelized, about 2-3 minutes per side.
  6. Serve immediately alongside scoops of ice cream, topped with the toasted coconut and caramel sauce.

This sizzling-hot trio forms a summer menu that you’re sure to return to time and again. Enjoy, and happy grilling!
